Onion Bhaji Dinner Rolls by @hamletsbakery

Ingredients

350g strong white bread flour
1 level tsp nigella seeds
1/2 tsp ground turmeric
1/2 tsp onion salt/granules
1/2 tsp garlic granules
1/4 tsp kosher sea salt
7g fast-action dried yeast
50g sour cream
175ml water
1 small egg
Howdah Snacks Onion Bhaji to garnish

 

Method:

    1. In a large bowl, combine the flour, nigella seeds, turmeric, onion granules, and garlic granules. Add the salt and yeast to opposite sides of the bowl from each other. Tumble in the sour cream along with the water and knead for 8-10 minutes. Cover and allow to double in size. (30-45 minutes)

    2. Line a small baking tray with parchment. Knock-back the dough and divide it into 6 equal pieces. Using a cupping motion, roll each piece of dough between your palm and the work surface to create a tight ball and place them into the lined baking tray. Cover and allow to double in size once more.

    3. Once the rolls are nearing the end of their proof, preheat the oven to 190C (fan). Brush the tops of the rolls with a beaten egg using a pastry brush, crush the Onion Bhaji snacks, and scatter across the tops of the rolls. Cover the tray with a piece of foil or parchment and bake for 18-22 minutes.

    4. Allow to cool slightly, serve warm and enjoy your Onion Bhaji Dinner Rolls!
