Onion Bhaji and Bombay Mix, available at Sainsburys
Ingredients:
Howdah Onion Bhaji
Howdah Bombay Mix
500g small potatoes
1/2 tsp Chilli Powder
Pinch of salt
1 tbsp olive oil
2 tbsp Greek or natural yoghurt
1 tsp curry powder
Pinch of fresh coriander leaves
Green chutney:
Handful of fresh coriander
4 - 5 Mint leaves
1 Green finger chilli
Pinch of salt
Squeeze of lemon juice
Pinch of cumin powder
Tomato & green chilli salsa:
1 - 2 tomatoes, grated
1 Green chilli, chopped
1 Garlic clove, grated
Pinch of cumin powder
Pinch of coriander powder
Method:
Boil the potatoes in salted water until fork tender, about 15 minutes. Drain, then place on a baking sheet
Lightly crush the potatoes with the bottom of a cup or glass, then drizzle with olive oil. Add the chilli powder and salt all over the potatoes. Roast in the oven on medium - high for about 15-20 minutes or until golden and crispy
Whilst the potatoes are crisping, prepare your chutneys and salsas. For the curry yoghurt dressing, simple combine the yoghurt, curry powder and salt in a bowl and mix well until combined.
For the green chutney, add all the ingredients in the list to a food processor and blitz. You may need to add a splash of water for the ingredients to blitz properly and get the chutney texture
For the tomato and green chilli salsa, combine all the ingredients listed above in a bowl and mix well. Season to taste
To assemble, layer your potatoes on a plate, followed by the curried yoghurt dressing, green chutney, tomato salsa. Then add your lightly crushed Howdah Onion Bhaji snacks and a handful of Bombay Mix. Finish with fresh coriander and enjoy!
