110g softened butter
110g golden caster sugar
110g golden caster sugar
2 large eggs
½ tsp vanilla extract
110g self-raising flour
For the icing
150g softened butter
300g icing sugar
3 tbsp milk
3 tbsp chocolate chai powder
100g Howdah Bakarwadi
Method
1. Pre-heat the oven to 180°.
2. Place cupcakes cases into a muffin tin.
3. Whisk together the softened butter and sugar until the mixture is pale and fluffy.
4. Add the eggs and whisk these into the butter mixture.
5. Gradually add the flour, then the vanilla extract and mix until everything is combined.
6. Pour the mixture into the cupcake cases as equally as you can.
7. Bake in the oven for about 15 minutes or until a knife comes out of a cake cleanly.
8. While the cakes are cooling, make the icing. Stir together the butter, icing sugar and chocolate chai powder. You can loosen the mixture with milk if it's too thick.
9. Once the cakes are cooled, top them with the icing mixture and crumble on the Bakarwadi. Enjoy!
